Cajun Stew

This Stew is packed with flavour and nutrition!
It’s super easy and can be cooking for your work lunch while you’re asleep, or for your dinner when you get back home!
Oh yes! Out comes Weird Vegan Lady’s Crock Pot! She’s a thing of beauty!

This Stew boasts shed loads of:

Did you know that Vegans live an average of 9 years longer than Omnivores?
Yup! Look it up! I speak the truth!
A lot of the time, there’s a big difference between losing weight and being healthy.
You can lose weight and feel better than you did on an Omnivorous diet, but you are still feeding your body carcinogens and slowly causing heart disease and tonnes of other super scary illnesses that people think are normal to get in old age.

Enough of all that stuff you most probably already know!
Eating healthy is so easy with a slow cooker! Awesome for batch cooking!
I fill mine to the brim with freezable meals like this, then you can switch it up one day by wrapping it in filo parcels or chucking it on a baked potato for a lazy lunch time or pre-gym carb loading!

Anyway, enough of my motor mouth.

Ingredients:

180g Quinoa
160g Frozen Peas
1/3 Red Cabbage – chopped
1 tin Sweetcorn – drained
1 Red Onion – diced
2 tsp Cumin
2 tsp Paprika
1 tsp Coriander (I ground seeds)
1 tsp Garlic Powder
1 tsp Thyme
Black Pepper to taste
1-2 tsp Cayenne Pepper – optional
1 tin Pinto Beans – drained and rinsed
1 Garlic Clove – minced (I use very lazy)
2 tins Chopped Tomatoes
6 Baby Potatoes – halved
3 TBSP Ground Flax
Veg Stock (see description below)

The only thing you need to do, is sweat your Onion in the Spices for a few minutes, I used a tsp of Coconut Oil for this.

Then you just chuck it all in the pot and give it a good stir to combine everything!
You need just enough Veg Stock to cover everything, make sure those naughty potatoes are submerged!

This is so easy!

This will be ready in 4hrs on high or 6hrs on low.

Sorted!

Now bugger off and go and do something useful! Or just have a cup of tea and slob around in your pants, I’m not judging!
If you aren’t off out… go and get some fresh air… just so you can walk back in and smell the guilt free tasty pot of magic!
