What a day!
Kids back from school and driving me insane! The house is a mess! Toddler screaming and clinging onto my trousers! So much to do and I hadn’t even planned dinner!
I even have, said toddler, balanced on my hip as I’m writing this.
This was not the day to not have any wine in the house… still, bed time is creeping up and the kids need something nutritious.
Weetabix did cross my mind I must admit… but they only had a Baked Potato at lunch, so…
Out comes the Pasta!
1 Red Onion
2tsp minced Garlic
1 tin Chopped Tomatoes
Cook your Pasta.
Sweat your Onion in Olive Oil and some Black Pepper until soft and add your Garlic.
Stir through for a minute or two.
Add the Basil and stir, and then immediately add your Chopped Tomatoes… simmer for about 4 minutes.
Take it off the heat and add your Flax and Nooch, stir through.
Tip it in a blender with the Water and whizz till smooth!
Super easy! Even with a toddler hanging from your trousers!
You never need to buy Pasta Sauce again, and this comes in at under a quid! Plus, there are no horrid preservatives or added salt and sugar… just pure, healthy nutrition and the kids love it!
The added bonus is, it’s super quick to make, and you probably have all these ingredients in your cupboard.
The best part is, this makes enough for 4 kids bowls of Pasta, so I’ve put the rest in the fridge ready for tomorrow, or, you can keep it in the freezer for another emergency day!
Mix with the Pasta, and serve to the kids to shut them up for 5 minutes!
