WVL Weekly

Hello everyone! Welcome to the next instalment of WVL Weekly! Hope you have had a fabulous week, and are ready for some more weird food ideas!

  • Monday 23rd January 2017

Breakfast – 9am

After a weekend of indulgence and copious amounts of alcohol consumed… I needed to get back on the healthy train! Kickstarting my morning with a gorgeous Asian inspired bowl of goodness! I threw some mushrooms and asparagus into a pan and sprinkled in some chinese 5 spice and a couple of TBSP of water. Cooked it off for a few minutes, adding more water when needed to stop it sticking to the pan. The red pepper went in just as i was about to serve to warm it through. I added some brown rice and avocado, topped with some sesame seeds and chilli flakes, and added a couple of TBSP’s of light soy sauce. Yumciousness!

Lunch – 1pm

After making Weird Vegan Kids their packed lunch this morning, I found myself engulfed in jealousy! How dare they get to eat such deliciousness without me! Then I remembered I was in control of my own tasty destiny, and could quite easily stop moaning at myself and make one for me! So here we have it, a sweet potato falafel wrap with cucumber, grated carrot and Vegenaise. Yummy destiny fulfilled.

Dinner – 7:30pm

Husband on nights, kids just gone to bed, I decided to make myself something gorgeous and snuggle into my PJ’s with a new box set. Lost. I know, I know! I’m super late! Everyone has seen it, and I am pretty sure I have heard how it ends, but I just needed something to sink into, and it’s going well… I like it! Anywho, I rustled up a lovely sweet jacket potato, a tender, steamed red cabbage steak some roasted kalettes and spicy peanut beans, food heaven! Pre-bed tea – 9pm

No cosy night watching a box set would be complete without a steaming mug of hot chocolate! I literally bunged a mug of Alpro soya chocolate into the microwave and blipped it for 1.5 minutes. What could be easier than that? Having it cold I guess… smart arse. Night!

Breakfast – 9am

Who doesn’t love a good ol’ plate of beans on toast? Normally I have them in a bowl next to my toast, I have an innate fear of soggy bread… but this morning i decided to throw caution to the wind and face my demons! The beans went well and truly on top of the actual toasty bit! Madness! It wasn’t too bad actually! Wholemeal toast, no butter, reduced salt and sugar baked beans and spinach. Wonderful.

Snack – 11am

Banana. I ate that.

Lunch – 12:30pm

Last night’s baked sweet potato was a bloody great whopper of a thing! So I baked the whole beast yesterday, and kept the other half for todays lunch! Which made it much easier to choose what to have, as I can be rather indecisive, much to my own irritation. I chose to douse my tattie in hummus, baked kale seasoned with garlic, turmeric, cayenne pepper, black pepper and paprika, and a sprinkling of lentil sprouts. Bootiful!

Dinner – 7pm

No words to describe how absolutely delicious this was! Luckily, I wrote it all down and i’ll be able to make it again, woohoo! Which also means that you will be able to try this plate of mmmmm too! I still have the smell of citrus on my fingers… only just realised this as my husband shot me an odd look, which made me notice I was mindlessly sniffing my fingers. Awkward. I chucked some garlic bread in the oven too and had a lovely feast, I even sat at my dinner table instead of balancing it on my lap and tipping half of it on the floor like i usually do. Top job. Lemon Lime Lentil Linguine, I love you.

Breakfast – 9am

I could feel it as soon as I opened my eyes this morning… an aching urge I get now and then to throw out my inhibitions and the feeling was strong today. No one could get in my way. It was going to happen. And not just breakfast, oh no my friend, that would just be the start! It had to be an entire day of naughty food! A proper sausage fest! Muhaha! I kick started my mischievous day with a fry up! Scrambled vegan egg, sausages, mushrooms and beans!

Lunch – 1pm

Raiding through my freezer and what do I find?! Something with ‘sausage’ written on it! Boom! That’s what i’ll be having then! Tesco’s own sausage rolls, and chunky chips! Bbq sauce and Vegenaise… the best condiment combo! 

Dinner – 7pm

The day just wouldn’t be complete without sasuages for dinner would it? Plus… it’s been ages since i’d had sausages, I had almost eaten one of my fingers. But after all that junk food, my body was telling me off a little… I was tired, I felt a bit groggy, to put it bluntly I felt crap if truth be told. I needed to add loads of Veg to my last meal on sausage day, and boost my nutrient levels a bit. So I made a huuuge roast! And I actually enjoyed the cabbage the best! I went to bed much earlier tonight, I think i had gone into a junk food coma. Totally worth it.

Breakfast – 9am

I had to make today a good one! After the indulgence of Sausage Wednesday. So I kept it simple this morning with some PB on wholemeal toast and a banana. At least the banana was sausage shaped! Ah memories.

Lunch – 12:30pm

My little lady and I had been dancing and doing housework all morning to some very loud tunes! (Sorry Mandy next door!) So we needed something to give us an energy boost! We enjoyed a gorgeous 3 bean chilli for lunch with brown rice. In last weeks WVL Weekly, you may remember my Nan coming round for the day? I made a big batch of 3 bean chilli and made burritos for us, I spooned the rest into a freezer bag, and all I had to do today was heat it in a pan. Awesomeness!

Dinner – 7pm

I finished my day off with another freezer delight! Batch cooking means I can choose to be lazy and heat something up on my ‘leave me alone, i’m tired’ days. We all have those sometimes. Usually we reach for the quick and easy ready made freezer foods that don’t do our bodies any favours (see sausage-fest from yesterday!) But if you have some super healthy leftover meals in the cold cupboard, you have no excuse! Besides, I ate all the naughties yesterday, so out comes my lovely Chickpea Tikka Masala! With some brown rice. Boom.

Breakfast -9am

Do you know what I haven’t had in a long time? Weetabix. Can’t go wrong with a bit of ‘bix on the odd occasion! I had forgotten how much I like it actually! I use Wholebean Soya as, to me, it’s the plainest tasting milk and I actually can’t remember what cows milk tastes like now! If you go for this milk, you need to make sure you have a balanced diet to get all you vitamins and minerals in, as this particilar one isn’t fortified. Most other milks are though. I have studied nutrition and am confident I am getting everything i need through my food, so using this milk is perfectly fine!

Lunch – 1pm

 I LOVE Sweet Potato, especially baked! I was hankering for one today, I spent the day batch cooking and it was an easy thing to shove in the oven and get cooking, leaving me time to do mixing, chopping, experimenting and enjoying watching my husband deal with the kids! I topped it with some baked beans mixed with turmeric, black pepper and cayenne pepper. Some steamed red cabbage, brocolli, and some savoy cabbage. Super!

Dinner – 7pm

Oh my wowzas! After making this pizza, i have decided I am going to do a feature on healthy pizza’s. I have so many different ideas, and everyone loves pizza! So watch out for my pizza feature, coming soon, which will include many recipes, as well as this one! This beauty was a spicy mexican pizza with tofu, and it was epic!

Breakfast – 9am

After my delightful tofu pizza last night, i wanted to use up the rest of the block, so I crumbled it up, and added some balsamic vinegar, fresh basil, garlic and tomato puree. Baked in the oven for about 15 minutes, it gets a beautiful seared edge and deepens the flavour. Check me out sounding all profesh! Must say something silly to balance it out… bottom. There, that’s better. I threw together a raw salad with rocket, lentil sprouts and red pepper, and added some baked sweet potato chunks. I did serve it in a wrap, but half of it fell out and I ended up devouring it with my fingers! Don’t tell my mum…

Lunch – 1:30pm

Super stuffed from my huge breakfast, it took till 1ish to start feeling hunger pangs! Some of you will know that my son got a sickness bug recently… well, on that day I was making a huge vegetable balti and was looking forward to tucking into it… that’s when my mummy duties were called for! So I had to abandon that idea and reach for quick freezer food later on! When i got a spare 5 minutes, I portioned it all out and chucked it in the freezer. So today, I grabbed a bag, defrosted it and boiled some brown rice. Et voila! A gorgeous curry, in minutes! Huge lover of batch cooking for this reason!

Dinner – 7pm

Had to get some nuts in for the day, so I had a yummy satay with spinach, sweetcorn and broad beans! My satay addiction in strong!

Breakfast – 9am

I told you my satay addiction was strong right? Breakfast satay is the best kind of satay! I used brocolli and sweetcorn, some sesame seeds and chilli… and of course, some brown rice!

Lunch – 12:30pm

Another freezer favorite of mine! Yes… I had it the other day, but it’s delicious! Good old chickpea tikka masala! I realise I eat a lot of brown rice too, but it’s full of wholegrain goodness, and give you a superb amount of energy, curbing hunger for longer!

Dinner – 7pm

Finishing off my Sunday with a good old british favorite! Linda McCartney sausages, skin on mash, savoy cabbage, brocolli, corn on the cob and lashings of gravy! Then sitting down with a lovely glass of merlot, watching crap on tv, ready to start a brand new week in the morning! Night night all! See you next week!
