WVL’s Tofu Scramble

I really like Tofu Scramble, although, I have tried many different recipes and have never seemed to LOVE Tofu Scramble… I wanted to love it! It’s such a healthy thing to eat, especially if you bake it using no oil (much easier that way too).

So I set myself the challenge of making a Scramble that I would enjoy again and again. When it comes to scrambled eggs, there are two kinds of people in this world. Those who like it dry, and those who like it a little more moist. So I wanted my Tofu dish to work both ways… if you are in the dry camp, leave out the Vegg Yolk, if you are in moist camp, the Vegg makes it, so order yourself some!

​Ingredients:

1/4 – 1/2 block of pressed Tofu
1TBSP Nutritional Yeast
1tsp Turmeric
1tsp Garlic Powder
1tsp Cumin
1 Vegg Yolk – optional

Ok folks, if you want yours dry, 100% healthy, without the Vegg Yolk, you can really easily bake this with no oil. All you need to do is add all the ingredients to your crumbled Tofu (minus the Vegg) massage the spices in with your fingers, get it on a baking sheet on a tray, into the oven on 200c and bake until the edges start to brown, about 10-15 minutes. Couldn’t be simpler!

For those of you who would like to do it the traditional way, in a frying pan, either dry or moist, listen up!

Ok, so your tofu is already pressed and your ingredients are measured out. You need to break down your Tofu with your fingers. Tear it up into crumbley peices using your best naughty face, we all have a little destructive nature buried in our crazy brains, so take the opportunity to revel in being able to make a bit of a mess! *mischievous chuckle*

Pop a bit of oil in a pan over a medium heat and chuck in your Tofu, Garlic Powder, Cumin and Turmeric and start shoving it around with a spoon to get it moving. Let it sit and cook off for a minute now and then, and then continue to push it around and steal it’s lunch money. This should take about 5-10 minutes.

Next, we are adding the Nooch (Nutritional Yeast) mix it up to combine the flavors, fry it off for about 3 minutes longer and then move to the next step. If you are not using the Vegg, you’ll need to take it a little further, and once the edges start to colour, season with Salt and Pepper and you’re done! Enjoy!

Ok, here comes the Vegg! You can either mix it up before hand, using the instructions on the tub, or do what I do and add the powder and water separately, and mix well while you’re cooking.

So give it a good turn over with your spoon, and cook for a further 5 minutes. It will need moving around for the whole amount of time, swishing and combining. When your time is up, season with Salt and Pepper, serve up and tuck in!

Don’t forget to use your face to eat it. With a fork too if you want to be posh.
