WVL Weekly

Here we are again! I have been on a mission to get more organised and post more frequently! Which, ironically, meant that I had to stop posting for a while to get into a groove! Well I am back with gusto and ready to take on the world with my weird and delicious vegan antics! Let’s have a look at what Weird Vegan Lady got up to this week..

  • Monday

Breakfast – 9am

 I started my busy week off with a deliciously filling bowl of nutella style porridge! Oats, water, cacao powder and some freshly ground hazelnuts! Yum!

Lunch – 12pm
After doing the weekly shop yesterday, I accidentallyonpurpose bought 4 boxes of stuffing! It was still stuck in my mind and I just HAD to have some! So I made a bubble and squeak! Sage and onion stuffing with carrot, cabbage, agave nectar parsnips and broccoli. It was naughty, but delish! #noregrets

Snack – 3pm

The school run was looming and I needed to walk our k9 companion, Cooper. So I munched on an apple and had some lemon water to give me a boost!

Dinner – 7pm

I needed to get some beans in today, so I made a gorgeous Chilli Bean Risotto for dinner! My omni husband took some for his night shift at work too and admitted it was delicious (muhaha!) Here is the recipe if you fancy making your own!

  • Tuesday 

Breakfast – 9am

So I have set myself the challenge of being as close to Whole Food Plant Based as I possibly can! Which basically means trying to avoid too many processed foods and eating more of a ‘clean vegan diet’. This meant trying to get in some berries too, as they are full of antioxidants which are essential for good health! One problem… I hate the bastards. So I am getting them into me in sneaky ways, one of these methods is in smoothies! This one was surprisingly nice! 

Lunch – 12:30pm

My smoothie was pretty filling with all those oats, so I drank it throughout the morning and had no need to snack! At lunch time I got my creative hat on and made the most delicious mexican inspired wrap! I used the spice mix from my Mexican Potato Skins recipe (minus the cornflower and thyme) and added it to some tomato passata to make a gorgeous sauce! I used the spice mix again, with the cornflour this time and made it into batter with some cold water, coated some cauliflower and roasted them in the oven. I fired some sweet red peppers over a naked flame and chucked it all in a wholemeal wrap with some mushrooms and sweetcorn! Delicious! My healthy eating is going well!

Dinner – 8pm

Oh dear. It was all going so swimmingly. Let me paint a picture for you… Every other Tuesday, my lovely mum has the children over night for me so I can get some much needed peace and quiet. Tonight was that night. The obligatory ‘mum’s night off’ bottle of wine was purchased, and i accidentally consumed slightly more than is recommended before attempting to cook some dinner. So my excuse for 2 Linda McCartney sausages on a slightly burnt vegan garlic pizza bread is: I got drunk.

  • Wednesday 

Breakfast – 9am

After last night’s faux-pas, I had a bit of a sore head! No amount of culinary genius was to be conjured this morning… so I settled for good old PB on toast and copious amounts of coffee! I was feeling too sorry for myself to take a photo, so here is a picture of a cat with the wrong teeth.

Lunch – 1pm
Ah, feeling much better! Time to make amends with my body and give it some actual proper food! I made a divine Thai Green Soup and wolfed it down with a ciabatta roll, it was everything I needed!

Dinner – 7pm

I was in the Asian food mood today! I had spent my time, without my little ones, lolloping around in my pyjamas and watching box sets, thinking about having a shower and then not bothering because ‘sod that when I have actual time to myself, amIright!?’ Anywho, the kids were back. Yay. So I fancied something quick and easy, a stirfry with some wholewheat noodles did the trick.

  • Thursday 

Breakfast – 9am

Right. Back on it. This morning’s smoothie was like drinking tropical squash! So good and easy to drink, I blended it till it was suuuuuper smooooth…

Lunch – 12pm

I had lunch a little earlier today, the smoothie had me hungry at 11:30 as I didn’t have any wholegrains, was in too much of a rush! So I made something really satisfying for lunch, tandoori rice and beans! Brown rice, homemade veg stock, kale, chickpeas, garden peas and kidney beans with the spices from my Tandoori Paste recipe, minus the creme fraiche. It was epic!

Dinner – 7:30pm

Well well well! I was elated to find my local supermarket had DOUBLED their veggie frozen range today, and there were tonnes of new vegan products to try! This played havoc with my healthy eating plan, but I made an exception for the purpose of keeping the demand for vegan products up! That’s my excuse anyway, leave me alone. Quorn breaded fillets and some stupidly cute little button mushrooms, mixed veg with fajita spices in a wholemeal wrap. It was also smothered in BBQ sauce after this picture was taken. Nom.

  • Friday 

Breakfast – 9am

If you don’t like orange chocolate we cannot be friends. Jokes, I’m sure you must have some redeeming qualities. I am quickly learning that fruit smoothies are actually quite delicious! Here is proof:

Lunch – 12pm

Similar to smoothies, I have recently found out that I actually like soup too! I would never have believed 2 years ago I would be craving soups and smoothies. I love life’s little surprises! Makes this bizarre journey, we call ‘living’, more fun! So I made a beautiful Tikka Masala Soup, it was amazing!

Dinner – 7pm

I didn’t know what I fancied for dinner, so I just threw together a few of my favorite things! Baked sweet potato, sausages and kale and baby corn satay! Random… but so goood!

  • Saturday 

Breakfast – 9am

A whopper of a smoothie was made this morning! Blueberries, mango and pineapple with some water for drinkable consistency. It was huge and I had to drink it all the way through till lunchtime! But it felt really good to get my morning off to a fresh start again. I also had some peanut butter on some wholegrain rye toast with some flax as well. Perfect for a morning of running after my daughter at toddler group!

Lunch – 12:30pm

I wanted something healthy for lunch but I couldn’t really be arsed to make anything fancy. So I roasted some veggies and boiled some quinoa, green lentils and sunflower seeds in some water and mexican spices, mixed it altogether in a bowl and ate it with my face. It was pretty good actually! Sweet potato, carrot, butternut sqaush, red pepper and kale. Boom.


Dinner – 7pm

I made vegan lasagne!! The reason I am ridiculously excited about this is because I have been avoiding lasagne since going vegan. One of my favourite meals used to be vegetarian lasagne topped with cheese, and I hate vegan cheese substitutes. I was so worried about being super disappointed by it, I didn’t dare make it! Since I created my Ultimate Decadent Cashew Cheese Sauce recipe, I decided to bite the bullet and go for it! It was amazing! Yay!

  • Sunday

Breakfast – 9am

Mmm… that lasagne was so good, I had leftovers for breakfast! It was Sunday after all!

Lunch – 1pm

Yes! Another soup! West African Peanut Soup to be precise, with little bursts of Sriracha. Devilishly tasty, I do love peanuts, as i’m sure you have noticed if you have been following me for a while! I will be writing the recipe up for this one as soon as possible, so keep your eyes open!


Dinner – 7pm

Well, I was very good this evening! I pulled together a lovely array of veggies with some tofu and plonked them on some baby gem lettuce! I did try to eat it with the lettuce as a wrap, but I have to admit, it all toppled everywhere and was an epic fail. So I munched it all with a fork instead. I added some chilli to the tomato sauce for a kick, and it wasn’t half bad for a super heathy dinner!
