Kale and Chorizo

Well… no, this isn’t particularly 100% healthy BUT if it gets you to eat Kale, it can’t be that bad!

I used to love the omni version of this, in fact, when Linda McCartney relaeased their Vegan Chorizo I was thrilled!! It was one of those things I missed when I first made the change, so i revisited the side dish I used to love, and veganised it! It’s really quick and easy, and goes well along side some hearty and warming one pot wonders like stews and casseroles.

Ingredients:
2 decent handfuls of chopped Kale
2 Linda McCartney Chorizo Sausages
1 clove of Garlic
Salt and Pepper to taste

So, first things first, you need real skill to do this part, so if advanced chef skills seem daunting… turn away now! Shove the frozen Sausages on a plate and zap them in the microwave for 20 seconds, or until they are just soft enough to slice.

Phew! That was major! Now dice them into little squares. Be careful here… I made a boo boo a while back chopping these and ended up with a very nasty cut! It wasn’t my finest hour! If they aren’t soft enough, give them another 10 more seconds in the microwave! Mince the Garlic and you’re ready to go!

Drizzle a little cooking oil in a no stick pan and set it over a medium heat. Add the Chorizo and let it sizzle for a while until it has lovely crispy charred edges, keep it on the move to cook on all sides.

Next, add the Kale and Garlic and push it around until the Kale is lovely and soft and the Garlic is cooked, then, all you have to do is season to perfection with Salt and some freshly ground Black Pepper. Boom. Delicious side dish perfected!
