Ethan’s 3 Bean Chilli

This is now his new favorite dinner… I can’t keep up! Super healthy kids eat food like this! If you want to see Ethan cooking this up in the kitchen, you can watch him here!

Ingredients:

Oil for cooking
1 Red Onion
1 clove of Garlic
1 TBSP Tomato Puree
2tsp Mild Chilli Powder
1tsp Cumin
1tsp Paprika
1tsp Ground Coriander
1tsp Turmeric
1tsp Black Pepper
1tsp Thyme
200ml Veg Stock
400g Chopped Tomatoes
150g Kidney Beans
150g Blackeyed Beans
150g Pinto Beans
Rice and dairy free soured cream to serve

First, put the oil, onion, spices, tomato puree and garlic in a pan on a medium heat and cook gently to stoften the onion.

When the onion has softened, add the vegetable stock and let it reduce by about half the amount.

Next, plop in the rest of your ingredients, the chopped tomatoes and beans, and let it cook for about 5 more minutes! Then serve it with some rice and dairy free soured cream, and scoff it!! Easy as that!
